Direction:
1. Cook the rice per direction on the package.
2. Make the salsa:
Add chopped tomatoes, half of chopped yellow onions, 2/3 of chopped green onions and parsley, and apple cider vinegar in a bowl. Season with salt and pepper and mix well. Cover and place in the fridge until you are ready to serve. Note: if you like your spicy, you can add chopped jalopeneos to your salsa.
3. Make the Guacamole
Add avocado, garlic, rest of chopped yellow onions, lemon or Lime juice, salt and pepper in a blender or food processor. Pulse until smooth and creamy.
4. Brown the ground beef
Place a skillet over medium heat and add avocado oil. Add ground beef to the warm, not hot, oil. Season the ground beef with cumin powder, salt and pepper and let the ground beef to brown. Remove from heat
5. Prepare black beans
In the same skillet, add drained canned black beans over medium heat and let them cook for just a few minutes or until warm. Remove from heat.
6. Serve
In a serving bowl, Add cooked rice, browned ground beef, and black beans. Top with Chopped lettuce, green onion and parsley. Add salsa and guacamole and shredded cheddar cheese.
7. Enjoy
