In one of my earlier posts I talk about the health benefits of oats. One of the many ways to enjoy this healthy whole grain is consuming it as granola. Unfortunately the granolas available in the market are loaded with sugar, vegetable oils, and preservatives. Therefore, I decided to create my own simple and healthy recipe, which requires no processed sugars, no vegetable oil, no preservatives, and it is gluten free (I use gluten free oats).
What you need:
- 5 cups of old fashion rolled oats (Gluten free if you are highly gluten sensitive or have celiac disease)
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 cup 100% pure maple syrup
- 1/4 cup water
- 1/4 cup coconut oil
- 1 tbsp vanilla extract
Direction:
- Preheat oven to 350 degrees F. Place parchment paper in a medium size baking tray
- In a large bowl, mix together oats, cinnamon and nutmeg
- Add maple syrup, water, coconut oil and vanilla extract to the mixture
- Mix well
- Pour the mixture into the tray and place in oven
- Stir every 15 minutes until golden and crispy or about 45 min.
Some healthy ideas to enjoy your granolas:
- On top of a Chia seed pudding
- Mix them with some nuts and consume as a snack
- Make a coconut yogurt parfait
