It smells like fall, here in northern California. I love fall for all the beautiful colors, but most of all for pumpkin. I love Pumpkin pie, Pumpkin bread, Pumpkin latte, etc. The problem with all of these delicious and comforting fall treats is that they are loaded with tons of processed sugars, flours and other flavors that who knows where they come from. So I decided instead of giving up on all of these favorite fall treats, experience with them and make healthy versions of each. I have already shared my pumpkin pie recipe with you. Here you will find my favorite, and my families favorite, pumpkin pie bread recipe. I am still working on perfecting my own pumpkin latte recipe and as soon as I get that all figured out, I will sure share it with you here.

Here is the recipe for this delicious, comforting and nutritious pumpkin bread.

What you need:

  • 4 Pasture raised eggs
  • 1/4 cup Avocado oil
  • 3/4 cup pumpkin
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon gluten free baking powder
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup raw coconut sugar

Direction:

  • Preheat oven to 325 F
  • Mix all wet ingredients (eggs, oil, pumpkin) in a medium size bowl
  • Add dry ingredients (cinnamon, pumpkin pie spice, gluten free baking powder, almond flour, coconut flour, and coconut sugar)
  • Mix well
  • grease a loaf pan and add all the ingredients to it
  • bake for about 60 minutes
